Carnitas and Carol

Last night for The Walking Dead, I made pork Carnitas from Gimme Some Oven (one of my favorite recipe blogs). I love being able to throw food in my crock pot and leave it until it’s ready to eat. In the recipe it called for shredding the meat and placing in the oven to broil for the final step. By the end of the day I wasn’t wanting to do any extra steps but thank god I followed the instructions because they became soooooooo crispy!!! They were perfectly crispy and melt in your mouth amazing! I served them on whole wheat tortillas from Aldi, with some organic Mexican shredded cheese I also get from the A, lime wedges, onions, lots of cilantro and siracha. The pork butt roast only cost me $10 for about 3.5 lbs from Publix. I love this recipe and next time will be making it when we don’t have company so we can have all the leftovers to ourselves 🙂 This fed 5 people having two full tacos each! Of course I accidentally left the crock pot on warm all night with the leftover juices because, well i’ll blame daylight savings but after everyone left I didn’t touch a dish and went straight to bed. The house didn’t burn down and all is well. Here is the mouthwatering set up.



Sometimes you need a day… or a few to just let whatever emotion is trying to hit, hit. I haven’t been writing or cooking and today I lost it and had to surrender to a day of “nothing”. A day where I let the shitty feelings sink in and just be. A night of watching Shameless, cuddling with my boys and sipping on a margarita was all I needed. I was able to come out of my bleh mood long enough to throw together some Cajun sausage and rice 

This was the leftovers after two whole bowls were devoured. Basically take two polka kielbasa sausages from Aldi, cut into quarters, sautée in a pan while your rice is cooking to the side (I used brown) then cut two bell peppers and an onion on the side to throw in with the sausage once browned. Add about 10oz of crushed tomatoes and as much Cajun seasoning as you like, salt to taste and eat up this easy comfort meal in your favorite house frump! Learning to embrace the mess… hopefully sooner than later, cause that’s where life really happens.

I finally got around to making some One Bowl Blueberry Banana Oatmeal Muffins from Running with Spoons yesterday and Im so glad I did. The baby slept for 9 hours last night so I didn’t do my usual snacking while feeding him at 4am and woke up so hungry!!! it takes me a while to make my coffee (Ill post my process one day) so its nice to have a snack while I wait when I don’t want to throw together a whole breakfast. I also love spending time with my son right when he wakes up because he is so happy and interactive. Those are the moments I try to take advantage of so having a muffin to snack on instead of putting him down to cook is so helpful. I made these with 100% whole wheat flour not whole wheat white so the consistency was Im sure different but I enjoyed it! I also was out of vanilla which sucks because I love vanilla! But they are filling and the perfect amount of sweet. I also made them so my boyfriend stops buying the publix ones! I ate one in a fit of hunger a month ago and the rest of the day felt like my insulin levels were so screwed up! He tends to only eat a small breakfast so these are my way of adding a little more substance and less sugar to his morning. I hope you all enjoy!
